Refried Black Beans


This is a super simple, easy, healthy snack/side dish to make. It's flavorful all on it's own, or you can add it tacos, nachos, tostadas, etc.. If you're looking to add fiber and protein to your diet, this is a great option! You can add whatever garnishes you'd like on top. Jalapenos, cilantro and cotija cheese would be popular choices. I, unfortunately, do not tolerate spicy food too well, and cilantro tastes like soap to me. I decided to use red onion, cotija cheese, and parsley.


I wanted some tortilla chips to go with this, but didn't have any. I did, however, have whole wheat tortillas and used those to make chips. Just stack up your tortillas and cut into 8 equal parts. Spray each side with cooking spray or brush on a tiny amount of oil to each side. Sprinkle salt on chips. Place on a baking sheet in a single layer, and bake in a 400 degree oven for 10-12 minutes.


Ingrendients:


2 cans Black beans


1 Tbl Olive oil


1/2 tsp Garlic powder


1/2 tsp Cumin


1/2 tsp Onion powder


Pinch of salt and pepper


Garnish ideas:


Sliced jalapeno

Tomato

Red onion

Cilantro

Parsley

Salsa

Cotija, or whatever cheese you desire!


How to:


  1. Add olive oil to a skillet or non stick pan. Heat over medium until hot.

  2. Add in the cans of black beans, with the liquid.

  3. Sprinkle seasoning over the beans, and stir to combine.

  4. Let beans come to a simmer - it will take about 5-6 minutes.

  5. When they come to a simmer, lower the heat to medium - low and mash beans with whatever you have handy. I used a potato masher. Mash and cook for another 5 minutes

  6. Add your garnishes of choice, and enjoy!
